Weekends are for relaxing and baking. Well at least that’s what I like doing.
If you know me well you would know that I love cooking and I love me some dark chocolate. Recently, I have been working with cocoa/chocolate to create my own healthy yet fun recipes in our kitchen. So this past Sunday I decided to try making vegan brownies and they were a hit!
Here’s the recipe below. Enjoy!
Ingredients:
2 Cups Flour
2 Cups Melted Cocoa
1 Cup Coconut Oil
1/2 Cup Brown Sugar
1 1/2 Cup Water
1 Teaspoon Baking Soda
1 Teaspoon Salt
1 Cup Peanut Nibs
Ingredients for Chocolate Garnache:
1 Cup Coconut Milk
1 Tbsp Coconut Oil
1 Cup Dark Chocolate
1/4 Cup Honey
Instructions:
Preheat oven.
In a large bowl, combine dry ingredients by sifting flour, baking soda and salt.
Combine melted cocoa, coconut oil, brown sugar, water then combine both dry and wet ingredients. Mix till everything is together in a smooth consistency.
Place in greased baking dish and put it in the preheated oven.
Let bake for 25-30 minutes.
While your brownie bakes move on to preparing the Chocolate Garnache.
First melt dark chocolate by using a double boiler or place in a glass bowl while placing it over a saucepan or pot with boiling water until the chocolate has melted down and smooth. Turn off the heat and add coconut milk and stir till you have a thick creamy consistency. Add honey and stir till smooth.
Remove brownie from the oven and top with garnache when cooled. Sprinkle peanut nibs on top of chocolate garnache and enjoy!
